The Miyabi collection of Japanese knives under the baton of the Zwilling brand owes many of its characteristics to the place of production, which is Seki, Japan , a renowned center for the production of samurai swords and knives for centuries. The blades are sharpened by hand using the traditional Honbazuke technique . It is a three-stage grinding, sharpening and polishing along the entire length of the blade, which ensures an extremely sharp blade . Honbazuke sharpening is proven by hundreds of years of work by knife masters. The knife is first sharpened using a vertical and horizontal rotating grindstone and finally polished with a leather honing belt.
The blade is made of two pieces of ice-hardened FC61 steel , its characteristic feature is high hardness and resistance to stress. The blade shape is similar to the Katana-Edge shape, which is considered one of the signs of master knives .
With its elegant octagonal handle shape , the Miyabi 4000FC is not only a stylish Japanese knife, it is also very safe and comfortable to hold. The impregnated one-piece Pakka wood handle features a mosaic logo .
